			<content:encoded><![CDATA[<p>On May 14th 2010 , Edwin Scholly  a world renowned chef based in the US and a film crew spent the day with Chef Orlando for a pilot TV show called Sailing Chefs. Chef Ed Scholly is one of a 100 Master Chefs in the US. He has been Chef to ex Presidents Clinton , Bush Senior and Bush Junior and cooked for most heads of state at one time or another.<br />
The day began by picking the crew up from the jetty at Jalousie and from there we drove through the lush vegetation to the organic farm  on the road to Fond St Jacques where a lot of Ladera’s fresh produce is purchased. Cletus, the farmer was happy to show off  his fruit and vegetables, explaining the unfamiliar ones and picking samples for us to try. The crew had their first taste of coconut water and jelly and their first view of  a cocoa pod. We left with a large basket of freshly picked herbs and vegetables and a long piece of sugar cane.</p>
<p>Back at Ladera Chefs Orlando, Ed and the yacht chef Marie Hummer went into the kitchen and were filmed preparing Mixed grill on Callaloo Mash. This was followed by everyone sitting down together for lunch where Chef Ed related some of his fascinating experiences from his career in the US.<br />
Everyone then returned to the yacht in preparation for departure to Bequi.</p>

			<content:encoded><![CDATA[<p>On Wednesday May 19th 2010 a local school, Vieuxfort Secondary School Campus A,  held  a careers day with invited speakers so that the students could gain insight into various occupations and so help them decide on their future course in life.<br />
Chef Orlando gave an interesting talk on what being an executive chef actually entails and also the personal qualities needed to succeed not only as an executive chef but also in life in general.<br />
The question time was lively , plenty of students had questions and the session only finished as it was lunchtime.<br />
Chef finished by inviting any of the students who wanted further insight to come and spend some time with him in the  kitchen at Ladera . He was then presented with a certificate of thanks by the students. It was a very worthwhile experience as by the reactions and comments of the students Chef had inspired and encouraged them , in whatever their chosen field would ultimately be.</p>

<p>Breadfruit are not native to the Caribbean, they were introduced in the 1790s by Captain Bligh to feed the slaves. He succeeded on his 2nd attempt , we all know what happened to him the  first time ! They originate from the East Indies and the Pacific Islands where they have been a staple food since time immemorial, the pacific islanders take large jars of fermented breadfruit with them on their long sea voyages. One of these first trees planted by Captain Bligh can still be seen today in the Botanical  Gardens in St Vincent. </p>
<p> Breadfruit are nutritious, 3 slices contain more than a days requirement of fibre , can be boiled, fried roasted , in fact used in the same recipes as potatoes or,  as their name implies, be eaten sliced like bread and be spread with anything you like. </p>

			<content:encoded><![CDATA[<p>February 23, 2010, Soufrière, St. Lucia, West Indies &#8212; Executive Chef Orlando Satchell of Ladera&#8217;s acclaimed Dasheene restaurant will appear as a guest of the prestigious Le Cordon Bleu cooking school in London.  The March 10, 2010 event is the second time Executive Chef Satchell will present at the legendary culinary academy.</p>
<p>Chef Orlando will introduce tomorrow&#8217;s culinary superstars to the rich spectrum of local spices, preparations, organic produce and fresh seafood that comprise the natural bounty of this island.  Ladera&#8217;s Dasheene and Chef Orlando are known for introducing the concept of sustainable cooking to St. Lucia and have successfully raised innovative West Indian food to its rightful stature within World Cuisine.</p>
<p>&#8220;Ladera is proud to extend a taste of St. Lucia to this audience of aspiring chefs, all of whom possess the knowledge and passion to fully appreciate the tropical flavors and creative renderings of island cooking that our guests experience every day at the resort,&#8221; says Waddy Francis, General Manager of Ladera. </p>
<p>On the menu for the Le Cordon Bleu demonstration is Chef Satchell&#8217;s signature Lobster Salad on Watermelon with a cocoa balsamic dressing, Cocoa Red Snapper on Sweet Potato Cake with ginger rum fruit salsa.  For dessert, chef will prepare his Chocolate and Basil Brulée with Cocoa Wafers. </p>
<p>Ladera&#8217;s Dasheene restaurant is known throughout the Caribbean for its innovative kitchen and creative renderings of island cuisine.  Unlike many island resort restaurants, Dasheene&#8217;s menu is based on native ingredients and relies on local bounty for its fresh, innovative take on West Indian cuisine.   The produce is grown for the resort by island farmers and neighboring plantations. Fish is caught daily in the nearby waters and the spices are harvested from indigenous St. Lucian plants.  </p>

			<content:encoded><![CDATA[<p>Enlarged prostate or Benign Prostatic Hypertrophy (BPH) is often treated surgically &#8211; by removing all or part of the prostate. While this will result in most people experiencing a relief of their symptoms, it may also leave them impotent. For men who want to maintain their vitality, surgery should only be used as a last resort. Treatment of enlarged prostate may involve antibiotics, medications to shrink or relax the prostate or bladder, soaking in a warm tub of water and frequent ejaculation. The goal is to avoid reaching the point of urinary retention, where one can’t urinate at all.</p>
<p>The symptoms of enlarged prostate are simply muscle spasms involving the prostate and surrounding tissue. This is a condition called prostatosis or prostadynia. Treatment includes muscle relaxants and warm baths. A very useful yoga exercise is Ashwini mudra (horse’s bottom). Sit or stand in any comfortable position. As you inhale, draw your anus upwards in a strong contraction and as you exhale relax the anus. Do this 10-15 times for up to three times a day. All squatting postures will also assist the function of contraction-relaxation in the lower pelvic area, which helps to increase circulation and to reduce the inevitable venous congestion that occurs after the prostate has been inflamed for a long time.</p>
<p>Being careful about prostate health before you turn forty can help you to take certain preventive measures. For example, STAYING FIT &amp; ACTIVE is the best proactive natural remedy to avoid prostate problems. Eating tomatoes is another good idea to improve the health of your prostate. Many studies show that Lycopene &#8211; the pigment that gives tomatoes their red color and has 10 times more anti-oxidant power than Beta-Carotene – has been found to restrict the rapid multiplication of cancer cells.</p>
<p>The mineral Selenium has been shown to induce DNA repair and synthesis in damaged cells, to inhibit the proliferation of cancer cells, and to induce the self-destruct sequence the body uses to eliminate worn out or abnormal cells (apoptosis). Grown or raised under ideal soil conditions, Brazil nuts are the most highly concentrated source of selenium. Enjoy just one Brazil nut each day and ensure your selenium levels remain OK. Other sources are sunflower seeds, oats, barley, shiitake mushrooms, chicken eggs, tuna and snapper.</p>
<p>VITAMIN E is a fat-soluble vitamin essential for normal reproduction and an anti-oxidant that neutralizes free radicals in the body. Vitamin E acts as a catalyst for Lycopene, activating its cancer-combating properties. Vitamin E, gamma-tocopherol, inhibits prostate cancer cell proliferation, without affecting healthy prostate cells.and prevents oxidative stress by working together with a group of nutrients that prevent oxygen molecules from becoming too reactive. Sources of vitamin E include mustard greens, turnip greens, chard, spinach, parsley, almonds, sunflower seeds, papaya, olive oil, sunflower seed oil, and peanut oil.</p>
<p>VITAMIN D from sunlight specifically targets cancers not caused by Testosterone. Avoid heat overexposure and get at least 20 mins of sunlight  every day. EAT as much green leafy vegetables and yellow &amp; orange fruits rich in Beta-Carotene. Beta-Carotene works with Vitamin D to balance the low tissue level of Lycopene in the tissues and restricts the rapid multiplication of cancer cells.</p>

Prostate health is especially important for black men with death rates from prostate cancer nearly two-and-a-half times higher than white men, according to the National Institutes of Health (NIH). Since the prostate gland plays a role in both sex and urination many people feel uncomfortable talking about it, even though prostate enlargement is a common part of men’s health.</p>
<p>As male life expectancy rises, so does the occurrence of a swollen or enlarged prostate due to aging. With prostate problems affecting 12% of men, chances are you, or someone you care about, will eventually have to deal with this problem. An enlarged prostate does not necessarily mean prostate cancer. The exact cause of prostate cancer is not known,however, a fat-rich diet coupled with genetic predispositions is suspected to be behind it. The male hormone Testosterone stimulates the growth of the prostate and the cancer cells that it might be containing. The prostate is an organ located beneath the urinary bladder and wrapped around the urethra in men and is about the size of a walnut. It is an integral part of the male reproductive system.</p>
<p>After the age of forty, the gland may enlarge and pressurize the urethra through which the urine is passed. The symptoms associated with enlarged prostate &#8211; dribbling, incontinence, burning sensation and the necessity to get up in the night frequently for urinating &#8211; can cause extreme irritation and annoyance. If left unchecked, benign prostate enlargement can cause serious health problems over time, including urinary tract infections, kidney or bladder damage, bladder stones, incontinence. It is important to take care of your prostate as you would any other organ and address any prostate problems you may be having.</p>
